Chicken Burger


I bought a $5.95 cookbook called "Step-by-step Quick Short Chicken Recipes". I was pleasantly surprise to see that the ingredients called for in the cookbook are actually quite readily available here, though it was from Australia.

For my burger tonight, I only followed the recipe briefly because by the time I went to NTUC after work, there were already no more spring onions, and coriander which are used together for the patty. So, I used my dried rosemary leaves as replacement.

Also, I've added a fried egg to the burger. As for the sauce, I mixed 1 tablespoon of mayo and 1 tablespoon of Dijon mustard, something which I got from another sandwich recipe.


Chicken Patties

4 servings

Ingredients :
- 500g minced chicken
- 4 spring onions, finely chopped
- 1/3 cup coriander leaves, finely chopped
- 2 cloves garlic, crushed
- 1 egg white, lightly beaten
- 2 tablespoons oil
- 1 lemon, halved
- 3/4 teaspoon cayenne pepper (optional) (can add on if you prefer spicy patties)

Directions :
1. Mix together all the ingredients, except the oil and lemon. Season with salt and pepper and shape the mixture into 4 patties. Refrigerate for 20 minutes before cooking.

2. Heat the oil in a large frying pan over medium heat, add the patties and cook for about 5 - 7 minutes in each side, or until browned and cooked through.

3. Squeeze the lemon on the cooked patties and serve with a salad or use to make burgers.

Burger with potatoes and spiced apple


Another attempt at something different tonight. Burger, or rather sandwich, if you preferred. The recipe calls for pork patty, but I'm worried about the very "porky" taste (some would know what I'm talking about) of the meat from supermarket so I bought minced chicken instead.

The chicken patty turned out all right, but if I were to try again, besides adding the onions, I might try to add some herbs to see how it turns out.

The other thing I did different was the potato rosti. I don't have any grater to grate the potatoes to make the rosti, so I just cut them into small strips, mixed with onions as stated by the recipe, sprinkled some grated Parmesan cheese on top and put it in the oven to bake.

As for the spiced apple, it was very easy to make and delicious. They would make a wonderful addition to any meal anytime, or just as a quick dessert or tea-time filler.

So, here it is, ending 2007 with this meal...

Pork burger with potato rosti & spiced apple (from : Women's Weekly, Sep 2007)


4 servings

Ingredients:
- 2 tablespoons olive oil
- 2 onions, sliced thinly
- 1 tablespoon finely grated ginger
- 500 g minced pork
- 1/4 tablespoon salt
- 50 g mixed salad leaves
- 1 loaf of bread

Spiced apple:
- 2 apples, peeled and chopped
- 2 tablespoons water
- 1 teaspoon mixed spice
- 1 finely grated lemon rind

Potato rosti:
- 2 potatoes, coarsely grated and squeezed dry
- 2 onions, sliced thinly
- salt to taste
- 2 tablespoons butter

Directions:
1. Heat 1 tablespoon of oil in a pan over medium fire. Stir-fry onions and ginger for 3 mins or until tender. Allow to cool.

2. Combine pork and onion mixture in a large bowl. Season with salt. Shape mixture into 4 even-sized and flat patties.

3. To prepare spiced apple, combine all the ingredients in a saucepan. Simmer, covered, for 8 to 10 mins, or until soft.

4. To prepare rosti, combine potatoes and onions in a bowl. Season with salt. Shape mixture into 4 even-sized patties. Heat 1 tablespoon butter in a pan over medium fire. Cook rosti for 3 mins on each side, flattening with a spatula. Drain on paper towels. Remove and wipe pan clean.

5. Heat remaining oil in cleaned pan. Cook pork patties for 4 to 5 mins each side or until cooked through.

6. Place leaves on bottom half of toast. Top with a patty, spiced apple and rosti. Cover with top half of toast.

The Munroe Melt

Once again, this auntie here, has made her own dinner. Wanted something fuss-free, with minimal preparations and cleaning up, and does not make the whole kitchen smelling of food. So a sandwich is the answer.


The two pieces were then supposed to be put together. Yes, I'm an idiot to put the cheese on top of both, which in the end, became too "cheesy". Though the sandwich ham I bought turned out to be a little too salty for my taste, I must say that the overall tasted like a pirated Subway sandwich. Not too bad at all... and extremely well-suited for lazy people like me.


The Munroe Melt (from : allrecipes)

1 serving

Ingredients:
1 crusty sandwich roll, split
1 tablespoon prepared Dijon
mustard mayonnaise blend
2 slices deli turkey
1 slice Swiss cheese
2 slices deli ham
1 tablespoon mayonnaise
2 slices deli roast beef
2 slices tomato
1 slice Muenster cheese

Directions:
1. Preheat the oven broiler. Line a baking sheet with aluminum foil.

2. Open the sandwich roll onto the prepared baking sheet. Spread the mustard-mayonnaise blend on one half of the roll and top with the turkey, Swiss cheese, and ham.

3. Spread 1 tablespoon of mayonnaise on the other half of the roll and top with the roast beef, tomato slices, and Muenster cheese.

4. Broil the sandwich open-faced until the cheese melts and begins to bubble and the ham begins to crisp around the edges. Remove the sandwich from the oven and put both sides together.
